Chef Fabien Foare, Meilleur Ouvrier de France, has a wealth of experience acquired in renowned establishments including the Ecole hôtelière de Lausanne, the Hôtel de Ville de Crissier and the Ecole hôtelière de Glion. He is now at the helm of the Millennium’s gastronomic and culinary world, offering refined and creative cuisine inspired by the great French brasseries.

Our Chef Fabien Foare, Meilleur Ouvrier de France, and his team welcome you to enjoy a moment of gourmet pleasure around traditional and contemporary dishes. To enhance your dining experience, our sommelier will introduce you to our exceptional wines and advise you on the best food and wine pairing.

Chef Fabien Foare has a lot of surprises in store for lovers of good food with his great specialties, like the famous soft and crispy pâté en croûte or the rib steak on the bone. Alongside his unmissable cooked charcuterie, presented on a dedicated trolley, are more personal creations like his seasonal dish “Transparency of sea bass with mountain herbs accompanied by a summer truffle vinaigrette” or his “Pike-perch soufflé with shellfish and Chasselas emulsion”.

Balance and seasonality

La Brasserie offers a well-balanced cuisine, respecting the seasons, favoring regional products for better quality. Everything is homemade, from appetizers to desserts. On request, we can adapt our cuisine to specific diets, allergies or food intolerances.

We welcome you for lunch, from Monday to Friday from 11:45 am to 2:30 pm and in the evening from Tuesday to Friday from 6:45 pm to 11 pm.

At noon, in the warm and well-lit atmosphere of La Verrière, our Chefs invite you to discover a complete range of catering services with a large hot and cold buffet for a gourmet break.

The daily menu offers a wide choice of dishes cooked on the spot and adapted to all tastes. The dishes are well-balanced, inspired by different culinary traditions, ranging from grilled to vegetarian dishes.

Our large cold buffet with a variety of hors d’oeuvres, gourmet salads, desserts and fresh fruit is a welcome addition to the catering offer.

Share a moment of conviviality with colleagues or friends by enjoying one of our dishes and desserts of the day.

A wide range of hot and cold drinks as well as cocktails and aperitifs are proposed for a relaxing moment at the end of the day.
